Welcome to my website and my world.  It’s a lifestyle – whole, real, food.   Over the many years of my health journey I have always said optimal health begins with eating a whole food diet.  Plant based nutrition is becoming a revolution.  Why?  Because there’s nothing we can obtain better from animals than we can from plants. Having just completed my certification in Plant based nutrition through Cornell University, based on the work of Dr. T. Colin Campbell, I am excited to share the keys to optimal health and how to create your own whole food plant based diet lifestyle.

Karen Lee, Personal Nutritional Consultant, Health Advocate and Food Educator, provides guidance and information on choosing nutritional programs and products to help you achieve optimal health and wellness. She is a graduate of Duke University with a BA in psychology, a mother of three children and lives in Montclair, NJ.

How did I get interested in nutrition?

I have always been interested in living a healthy life but it was not until I had children that I truly became aware of the importance of diet and nutrition. My second son was ill for one year with strep throat when he was 4 years old. After another of many visits to the doctor’s office, I walked into the local health food store and began talking with the owner. She gave me some information and suggested supplements that I could add to my son’s diet that would help strengthen his immune system and provide him with the necessary building blocks to support his growth. Her questions led me to not only look at his health and ways of eating but also my own.

This was the start of taking a closer look at what I chose to feed my body and equally important what I chose to feed my family. It has been over fifteen years since I have brought nutritional awareness to my family and myself. Personally, I am stronger and healthier than I have ever been in my life. As a result of adding the necessary nutrients to my body, I am healthier, have more energy and am no longer plagued with chronic sinus infections, allergies, PMS, or fatigue.

What Is Diet verses Nutrition?

Diet is the actual food that you eat. Nutrition is what comes from the food you eat which is digested and absorbed by your body at the cellular level. The key is providing your body with the best whole food diet available, and using whole food supplements to support the nutrition of the body enabling it to function at the healthiest level possible.
